Can I do this?

I am currently looking for a staff solution. As I am hiring remote staff, I have a lot of security risks. What I wanted to do was the following;

I wanted to order a 4GB ram Dedicated server. On the server I want Linux to be installed. Then, I will install GUI on it so the server can be managed by the staff. On that server, I want to install an SSH client, and put in the passwords in their. That way the staff do not know my passwords, yet they can still access the server. That makes it easy for me, because if I ever fire anyone, I just disable their access. Now my question is, can I run multiple remote desktop sessions with Linux? For example, if I am logged in and a staff member, will this be possible? What software do I need to do this?
