Guess what? Looking for a potential new host

I run a few websites that have been up and running for about 4 years now. Just over a year ago we made the jump to a dedicated server. Our current server is an AMD Athlon 64 X2 Dual Core Processor 4000+ server with 2x 160GB of software raid hard disk space and 1 GB of memory.
We’re at the end of our 12 months, so we’ve now got the option of moving elsewhere. We’re currently with 1and1 and have had no problems with them. So what I’m looking for are options for a new dedicated server. Now our 12 month contract is up the discounts we had are gone, and we’re currently paying around £60 a month. We do have the budget to go more – probably to around €90 a month.
Hard disc space isn’t an issue (we’ve still over 130GB free), and bandwidth is around 50 – 60GB a month typically.
MySQL is just running out of headroom more than anything. I’m guessing we’ll probably want around 4GB of memory, however it seems that to have more memory most hosts say you’ve also got to have a massively more powerful CPU, which isn’t really the case for us (CPU load is rarely more 0.35 but memory is always short).
All of the websites are database driven – a couple of busy phpBB3 forums, several Joomla websites and Gallery websites – taking us to around 700 MB of MySQL databases.
We also host email for our members, meaning we have about 25 domains hosted all with a Plesk control panel, which we still would need with a new host, so a 30 domain or 100 domain Plesk licence would be needed.
Most of our members of the forums are in the UK, our Joomla websites are mainly viewed from the UK and Sweden. Ideally I want a European host.
Any ideas?
